Brussels Sprouts Sweet Potato Quinoa Bowl

Adapted from a recipe on Lauren Kelly Nutrition. Cooked the quinoa in water, cut the ginger because I didn't have it, added an extra cup of sweet potato, only used about half the called for almonds.
